Stuffed Strawberries (Dairy Free/ Sugar Free)

We had a great long weekend! We could not have custom ordered nicer weather. It was warm and sunny the entire three days. Simply lovely! Ok I may have gotten a little bit too much sun, but I was only a wee bit soar. Yes I know, next time more sunscreen. All of my planning last week also paid off beautifully. We were definitely not hungry. All the food was delicious!!!

I have seen many foods get stuffed, that I thought was different.  When I saw strawberries stuffed with cream cheese and topped with whipped cream, I knew I would have to make my own version of this delectable little treat...

13 large strawberries

1/4 c. raw cashews (soaked)
2 tsp. water
1-2 tsp. honey

about 2 Tbsp. of coconut cream

Hull 12 of your strawberries leaving the middles emptied and cut off the bottoms just enough so they can stand up. If you cut a little too much off the bottom( like I did with a few of mine)  and there is a hole, just put a small piece of strawberry inside to block the hole. You can put the extra bits aside in a bowl. Cut up the extra strawberry and put into the bowl as well.


Drain and rinse your cashews and put into magic bullet with 1tsp. of water, honey, and your cut up pieces of strawberries. Puree until smooth.

Fill your strawberries.



Then top with a small amount of coconut cream



You can even decorate your small treats with the top stem of the strawberry!


                         Enjoy them... So good!!

Ham Veggie Frittata (Gluten Free/ Dairy Free)

We're coming up to the unofficial start of summer with the Victoria Day long weekend starting here in Canada and in one week the Memorial Day weekend in the U.S..
The weather is supposed to be sunny and nice and warm!!
Yay!!! Summer is here(well almost).

We will be camping this weekend. Alright so we have a trailer and many people say that isn't camping. So I guess you'd say, we're trailering this weekend. :-)

I will have many things made ahead of time because I want to be able to relax and enjoy my time. I have already cooked the pancakes, marinated the meat, cut up the veggies, cooked the quinoa, and made several dips including brushetta, ranch, and spinach. Yummy!

I hope that whatever you are doing this weekend or in the weekends to come you don't stress about.
 Be prepared and all will go smoothly.

This frittata dish is great for a brunch pot luck or you can have it for dinner. If I'm making it for breakfast, I'll get the meat and vegetables ready the night before and put them into the pan. It saves time for the morning.

1 tsp. olive oil
1 large onion- chopped
1 red or green pepper- chopped
1 clove garlic- minced
1 c. chopped ham
1 small tomato- chopped
1 tsp. basil
1 c. ripped spinach
6 eggs
1 c. almond or rice milk
1/2 tsp black pepper

Preheat oven to 350 degrees.
In a medium frying pan, saute onion and pepper in olive oil on low heat for about five minutes. Add garlic and ham and cook for two more minutes. Add in tomato, basil, and spinach. Mix thoroughly and evenly distribute into the bottom of a lightly greased 9" by 9" pan.
Mix the eggs and milk in a bowl. Pour over ham/veggie mixture. Sprinkle with pepper.
Bake for 45-60 minutes uncovered, until egg has set.
